Snow White Namas

Preparation time: 30 minutes
Ingredients
White onion, sliced in rings
Pepper & salt
Queenfish fillets (or trevally or other pelagic species)
Red and green chillies (how many is your choice)
Ginger & garlic
Vinegar
Lemon, sliced
Cocnut flesh from young coconut (called Yellow Cocnut in the Territory)
Method
- Place onion rings at the bottom of a bowl
- Finely slice fish fillets and layer on top of onion
- Add ginger and garlic and then pour vinegar into bowl
- Dice up the chilies and sprinkle over fish and other ingredients (Not too much, just enough to come up halfway in the fish layer)
- Add chopped red and green chillies and lemon slices
- Open a yellow coconut and scoop out flesh
- Sieve through a muslin cloth to create "snow" over the namas dish
- Chill for 30 to 40 minutes
- Best served with good beer
