Chicken Vermicelli

Ingredients

1 clove of garlic
1 tbls spoon of diced fresh ginger
1 onion
1 kilo of chicken - cubed
1 pinch of salt
pepper
1 cup of chicken stock
mushroom soy
1 rectangle of sea wasp. (Vermicelli noodles)
3 tomatoes

Method

  • In a pot or saucepan combine garlic, ginger and diced onion and fry up with a touch of oil for a couple of minutes

  • add the chicken and stil until chicken is white and cooked through, gradually add mushroom say (approx 3 tblspns)"The trick with adding sauces is that you always add a little; if you add too much you can't take it out."
  • stir then cover, stew for 10 - 15 minutes
  • cut 3 tomatoes into 1/4's add to dish, cook for 10 mins

  • add boiling water over the vermicelli noodles and cut noodles so they aren't too long

  • pour softened vermicilli into dish, stir thouroughly. If dish looks dry, add mixture of soy, stock & water - then on low hear coof for futher 5 mins



Not much more than that - what have you got - Chicken with a difference.

I agree with you Bill I have been making this dish for and eating it also for 52 years, no chicken stock and no tomatoes thats not Darwin Style

Definitely not the traditional method - been eating it these last 56 years and never seen it done with mushrooms before
