Oxtail Stew from Katherine

Ingredients

2 kilos of good meaty oxtail
2 tps spoons of oil
1 diced onion
1 tsp of chopped garlic
1 tsp of chopped ginger
a few dollops of tomato paste (roughly 3 tsp spoons and a bit more)
2 cups of beef stock
1 cubed turnip
1 cubed swede or parsnip
1 diced carrot
2 cubed potatoes

Method

  • trim the oxtail of extra fat (don't mind a little fat)

  • in a large pot, fry oxtails in oil until brown and cooked through

  • remove from pot

  • placed diced ginger, onion and garlic in pot with meat juices and cook until onions are brown and soft

  • throw in dollops of tomato paste and mix well

  • return oxtails to the pot and add 1/2 cup of beef stock and keep mixing over heat

  • add all the chopped up vegies to the meat mixture

  • add remaining stock and cook until vegies are cooked

  • for a more tender meat, stew for a longer period. You may have to add a cup or two of beef stock/water to prevent drying out



  • Not that's all it is - really simple recipe with the best bits of the animal that no one buys at the butcher any more. Lots of texture and flavour - enjoy
